Coconut blondie

This is one of my favorite recipe: it is really simple, quick to make and delicious. It’s also an healthy treat, great for breakfast or as a snack.



  • 3 eggs
  • 1 cup almond milk (coconut milk can be used too)
  • ⅓ cup coconut oil, melted
  • ⅓ cup honey
  • 1 cup almond meal
  • 2 tablespoon coconut flour
  • 1 ½ cups coconut flakes
  • Optional: Dark chocolate chips



  1. Mix eggs, almond milk, oil and honey in a food processor
  2. Pulse in almond meal, coconut flour and coconut flakes (add chocolate chips if you feel like it)
  3. Transfer ingredients into an 8×8 inch Pyrex baking dish
  4. Bake at 350° for 30 minutes
  5. Cool for ½ hour, then place in refrigerator and serve when chilled
