This is one of my favorite recipe: it is really simple, quick to make and delicious. It’s also an healthy treat, great for breakfast or as a snack.
Ingredients
- 3 eggs
- 1 cup almond milk (coconut milk can be used too)
- ⅓ cup coconut oil, melted
- ⅓ cup honey
- 1 cup almond meal
- 2 tablespoon coconut flour
- 1 ½ cups coconut flakes
- Optional: Dark chocolate chips
Directions
- Mix eggs, almond milk, oil and honey in a food processor
- Pulse in almond meal, coconut flour and coconut flakes (add chocolate chips if you feel like it)
- Transfer ingredients into an 8×8 inch Pyrex baking dish
- Bake at 350° for 30 minutes
- Cool for ½ hour, then place in refrigerator and serve when chilled
